Southern fried chicken

1 size 18 free range chicken
1 whole egg
200ml milk
100g cornflour
2 teaspoons sweet paprika
1 teaspoon ground coriander
1 teaspoon salt
1/2 teaspoon cayenne
1 teaspoon ground cumin
1 teaspoon sugar
1 teaspoon ground cardamon

Method:
Either buy a whole chicken and joint it into eight pieces or buy four marylands and cut each in half.

Dry fry the spices and combine with cornflour, sugar and salt.

Whisk the egg and mix with milk.

Dip the chicken pieces in the flour mixture, then into the egg mix and then back into the flour again.

Shallow fry in vegetable oil until each piece is golden brown all over. Place chicken pieces on a baking tray and cook in preheated oven at 200ยบ C for 20 minutes.

Serving Suggestion: Serve with lemon wedges.
