Fig and pistachio salad with lemon dressing

2 green witlofs, trimmed, leaves separated
1 baby cos lettuce, trimmed, leaves separated
6 green figs, torn into pieces
1/2 cup pistachios, roughly chopped
2 pieces of preserved lemon
1/2 cup extra virgin olive oil
2 tbsp lemon juice
1 tbsp honey
1 tsp dijon mustard
salt and pepper to season

1. Combine witlof, lettuce, figs and nuts ina large bowl. Put on a serving plate, cover and refrigerate.
2. Remove pulp from lemon and discard. Finely chop lemon skin, then put ina jug, add oil, lemon juice, honey and mustard. Season with salt and pepper and whisk until combined. Add dressing to salad just before combining.
