Cherry, rocket and pear salad

100g baby rocket leaves
2 pears, cored, cut into thin wedges
120g snow peas, finely shredded into strips
300g cherries, pitted, halved
50g parmesan, shaved

dressing:
1/4 cup freshly squeezed orange juice
1.5 tbsp red wine vinegar
1 tsp extra virgin olive oil
3 tsp wholegrain mustard
black pepper to season

1. Put rocket, pear, snow peas and cherry in a large bowl. toss to combine.
2. To make orange dressing, put orange juice, vinegar, oil and mustard in a small bowl. Season wit pepper and whisk to combine.
3. To serve, drizzle dressing over salad. Toss to combine and top with parmesan.
