Banana Butter

4 Bananas
1/2 cup sugar
2 Tbsp lemon juice
2 eggs
60g butter

Process banana and lemon juice, add eggs, butter and sugar. Cook and stir til it coats the back of a spoon.  Store in sterilised jars in the fridge.
